Handling
Handle carefully and avoid dropping.If the shell of an oyster is chipped, loss of liquor will dramatically reduce shelf life.

Storage
On receipt place in a fridge, preferably at +4C to +6C. If possible keep in original box, otherwise place cupped shell down, in a suitable container and cover with a clean damp cloth.We recommend the oysters are used within 5 days of receipt. Any oyster which is gaping and does not close when tapped must be discarded. NEVER STORE IN WATER.

Preparation
Opening oysters can be challenging for a novice but remember, care and patience are much more effective than brute strength!

Handy Hint
Steps 1 & 2 can be carried out an hour or two before the oysters are to be served if they are carefully returned to the fridge.

Cooking
If the oysters are to be used in a cooked dish, they can be opened by steaming or microwave oven. Times vary with size and shell thickness so watch carefully and remove oysters as soon as they start to open and before they cook.
